I already know that you can play brigette to get less than 3 basic Pokemon, but can you play it with less than 3 bench spaces open and grab 1-2 non-EX basics?

Yes, you can. Yo do as much as you can to complete the card's effect. Since there's just room for 1 or 2 Pokémon, you grab those you can fit in the Bench.
