Ruling Can you ask to look at # of cards in Opponent's Hand?

Few Questions:
1. Whenever you like, can you demand that your opponent tell you how many cards they have in their hand?
2. Whenever you like, can you look through yours/your opponent's discard pile?

Here's another question I just thought up:
-->When you opponent gets to discard a card from your hand without looking, can you shuffle your hand right before they discard a card?

I ask because I keep my energies in the back, trainers in the middle, and pokes in the front for organization. Call me OCD
