You can't really choose what it is. It is everything at the same time. If an attack needs it to be fire, it will provide fire. But at the same time it's fighting, water, grass and so on.
I'll give an example.
Your pokemon has an attack that sais to discard all metal energys attached to the pokemon. You have Double Rainbow attached. You can't choose the Double Rainbow to be only fire (so it wouldn't get discarded), it is still metal at the same time, and you have to discard it to use the attack.
