So two interesting situations today: We have a Flygon with 2 fire energy attached and a Double Dragon Energy.

Is it possible to use Flying Beatdown's optional effect if only one DDE is attached (and hence discarded)?

Second situation: Two Double Dragon Energies are attached to flygon, how many must you discard for the optional effect on the attack?

Pokemon TCG Online seems to think Situation 1 = Yes and Situation 2 = Both energies which could be a contradiction.

I've taken another look at this.

The rule for discarding energy in the TCG is that once the condition has been met, energy can no longer be discarded. As such, discarding the first DDE would fulfill the Grass and Fighting Type energy requirement to the game, even though you may have decided the you only wanted it to count for the Grass Energy.

As such, situation one is correct, while Situation two would be incorrect.

That's very interesting indeed... Thanks for clearing that up! Complex things these rules are :p

And on that note, would (theoretically) a single energy of that was both grass and fighting type at the same time be sufficient? (I'm not sure if rainbow energy counts due to the at any one time clause...)

Any single energy card in the TCG that has provided more than one type of energy only provides one energy at a time. As such, it would count for one of the discards, but not the other.
