General Question About Gold Stamped/Holo Cards In All Sets?

First off apologies if this is in the wrong section. This seemed the most appropriate place.

So Ive recently got back into Pokemon cards (as a collector only) after bowing out around Gym Challenge.

My question is about the fully holo/shiny gold stamped font cards. E.g. in a few boosters this week I pulled a Holo Kyogre from Emerald 6/106, then in another pack I pulled the same card but the name text and HP is gold, and the holo is different. Whats the deal with these?

As far as I am aware you can also pull any card in a set as a fully holo card.

How do these things fair, rarity-wise?

Those were the Reverse Holos. In each pack you get a 1 rare, 3 uncommons, 5 commons, and the Reverse Holo. It is any one card from the set and has the set Logo and gold HP and name. In Diamond and Pearl sets, the rev holos are different and the whole card is a strange "holonish" and personally I don't like them as much as the ones with Gold HP.

What are the reverse holo ones, that don't have a gold stamp?
 
The Reverse Holos are determined as follows:

First few Ex Series sets: The card itself would be foil, the picture not.
Later Ex Series: The set symbol name would be stamped on the picture.
Diamond and Pearl sets: Refer to the first Ex series.
