Would Holon's Castform's Delta Draw attack include itself, because technically it has has that delta symbol on the card, just not next to the name? And would all other cards in the same situation count as having a delta symbol on them, even if they weren't Delta Species?

It has to be next to the name. Similiar to the Apricorn Fields (or something) card that looks for Ball in their name, Balloon Berry is something that is not able to be searched for.
No it has to have in the name the Delta Symbol.

The cards that Casstform look for must have the delta species title in its name.
The only way for it to count itself is to have an Ampharos delta in play, making all your pokemon delta species.
