New to the updated TCG Live, am I missing something, or can you only play with Stella Crown cards? And when you redeem codes you only get Stella Crown cards?

I’m sure in the old version you had the whole catalog to chose from? If you collected them of course? slope game
 
If you're redeeming Stellar Crown codes of course you will only get Stellar Crown cards. All sets down to Sun & Moon are available in Live.
