If I have a Galvantula (Steam Siege) over a Joltik (Phantom Forces) with a Shrine of Memories in play and use the Night March attack, does that mean that the attack comes from a Lightning/Grass type and my opponent could be weak to any of these two types ?

Yes, that's correct. The only type that matters is the type of the Pokemon using the attack, not of the one whose attack you're copying. In this instance, a Grass-weak Pokemon would take double damage if attacked with Night March by Galvantula STS.
