let's say I have 4 Unown on my bench, can I use all of their abilities or only one per turn?

You can use Farewell Letter as many times as you'd like. The "once per turn" language there refers to that particular Unown while it's on the field.
The "once per turn" clause essentially does nothing in this case, seeing as once you use Farewell Letter, Unown is discarded, so in order to get it back onto your Bench it would have to somehow go from the discard pile to your hand to the field, and once it goes into your hand, the game doesn't know that it's the same Unown, and so you could use Farewell Letter again.
