I am wanting to play the TCG again, but wondering when the next reset will be? I am guessing around when Sun/Moon come out?
If anyone else can really clarify this, please let me know.

I thought when they go to a new generation they format to just that generation. IE Black/White then the X/Y sets. So I figured they might do the same when Sun/Moon comes out.
The Pokémon TCG has three major formats. One is Unlimited, where anything goes, but because of that it isn't used for organized play, unless you count the occasional bit of casual play in an organized setting like a Pokémon League. People trying to play it competitively are in for low turn count, high turn length games that are likely to end on the first players first turn.
Standard (formerly called Modified) features the latest sets, usually going back upwards of two years (currently
XY and later sets). Recently this was joined by Expanded, which so far has gone back to the previous "generation" of sets (in this case
Black & White and later releases). Rotation almost always happens after the World Championships, so expect it around September; this is a yearly occurrence and has been for most of the game's history.
You are correct that with a new generation in the games, some changes are likely to occur to the TCG, however they usually do not drastically affect rotation. It might mean some rules revisions or game mechanic shits or errata as needed. It is unusual for an entire generation to be cut for rotation (I am unsure if this has ever happened), and thanks to the Expanded Format, the absolute most we would lose is the BW-era sets.
Anything more than that is conjecture.
