Because back when Shining Charizard was released, this was what a Shiny Charizard looked like:
It was updated to black and red in Ruby/Sapphire and all subsequent games (and thus all subsequent card examples as well.)
Lots of Pokemon have radically different Shiny colorations in G/S/C compared to what they have now so it's not all that unusual.
