Imagine I have a Zoroark with DCE and this :

My opponent has got a Zoroark active too. May I use Foul Play, copy Foul Play, and finally copy Plunder ?

You can choose Foul play to copy, but then you must chose an attack from your Zoroark. Since Zoroark says "choose one of the defending pokemon's attacks" Plunder is not one of the defending pokemon's attacks, so you can't choose it.

Another thing:
May I use Foul Play, copy Foul Play, and finally copy Plunder ?
Using Foul Play after Foul Play will just make you copy the opponent's Zoroark again. Remember, if you use Foul Play to copy a Foul Play, the effect of Foul Play becomes:

"Choose 1 of the Defending Pokemon's attacks and use it as this attack."

Your own Zoroark is NOT the Defending Pokemon. You cannot copy an attack on yourself with Foul Play, no matter what.
