Oh geez let me think here, Symphonia 1 & 2 (I started the series with 2, loved the monster collection) Legendia, Abyss (3DS), Graces f, Xillia 1 & 2, Innocence (got a english translation patch). Those games are fantastic in world-building and character development as well as just a lot of fun.
I love that series, and I going to go out on a limb and assume you do as well (Vesperia is one of the only ones that I haven't played, no 360). And there is certainly a lot of material to work with for that series with how many mines those games tend to incorporate and their special mineral names.
Sup! GIA sounds like an amazing goal. I did my undergrad at the University of Idaho with a geological science degree and I'm currently attending Central Washington University as a graduate student focusing in stucture and tectonics with my master's research project. Applying geology to videogames is a hobby of mine and I love it when people create geologic maps of fictional worlds (such as skyrim and game of thrones)
