I have a 1st Shining Gyarados, but it has too many scratches on the holo, that's the only problem, so I'm interested in upgrading from what I consider NM to Mint/Gem Mint.

I have, but I'm going to focus my trades on finishing my collection first before I upgrade to 1st edition. So my only interest at the moment is the Shining Raichu. If we work anything out with that, I can throw in all the cards you were asking for and some other things.
