You should watch Full Metal Alchemist. It's great! I love the show. It starts you out laughing but then gets serous. To me and my dad, there's no filler in it at all.
Anime series me and my brother would reccomend to anyone: Neon genesis evangelion, Pokémon, The meloncholy of Haruhi Suzumiya, H2O Footprints in the sand, Case closed, G Gundam, Yu yu hakusho, Elfen lied (kinda risque), Full metal alchemist brotherhood, Shin chan (warning: dialogue is very NSFW), Sergeant frog, Cromartie high school and To LOVE-ru.
If the psychological aspect of Death Note appeals to you, then Kaiji, which is pretty much a cleverly-implemented gambling manga, takes alot of shots into the psychological dark.
Anyway, I agree with the others who suggested Fullmetal Alchemist: Brotherhood. Not to be confused with the first rendition which was simply titled Fullmetal Alchemist, Brotherhood has barely any filler and is, in my opinion, an extremely satisfying watch. It's not as "dark" as Death Note, but if good plot and character development are your main interests in a series, Brotherhood has lots of both.
Neon Genesis Evangelion is another good series but there are a few episodes one may consider filler, though those episodes do explain the plot and events of the series a bit more in depth. Regarded as one of the best series of all time by many, its plot and character development are superb if it's the kind of show you're into. If you do watch this, you'll also have to watch End of Evangelion afterward. There are also the Evangelion New Movie Edition (also known as "Rebuild") films that are being made, with the first two (titled 1.11 and 2.22) out and available to watch. Basically, Rebuild is a re-telling of the original series, but it takes a different direction at the end of 2.22. The third film is being produced and is due out in 2012 in Japan. At one time there was supposed to be four films, but it's currently unknown if it'll just be three films or if a fourth film is still planned.
I forgot to mention if you are going to watch Neon Genesis Evangelion, were a helmet for episodes 25 and 26 as they are very confusing and you may not want brains all over your cieling! (after watching all 26 episodes, watch End of Evangelion for brain repairing)

The most amazing anime you shall ever watch, in my not-so-humble opinion, is Desert Punk. Look it up. You won't regret is, unless that is you happen to be Zero... Other good anime are Fullmetal Alchemist, or better yet, Fullmetal Alchemist Brotherhood. I watched both, and liked Brotherhood quite a bit more, but the first FMA is still good. Soul Eater is also quite entertaining, and has certain similarities to FMA. Hetalia is a funny little anime that is not to be taken seriously at all. It's full of racism (and a little dash of history), but it makes for some pretty good laughs. Fooly Cooly, or FLCL, is a very short anime, but it's also very good. Of course I would also recommend Death Note, but you've clearly already watched that. Oh, and there's also this crazy thing called Excel Saga. I have watched quite a bit of it, and it is frankly the most messed up thing I have ever seen.....
A couple series that I have watched and really enjoyed are Fate: Stay/Night, and Claymore. The anime for Claymore is short, but the manga is still ongoing, and has a lot more plot to it.
Super Dimensional Fortress: Macross is a very good series. It's one of the defining series of it's genre. All of the original Gundam series from the Universal Century are highly acclaimed in Japan -the newer ones don't stand up to them and that's an international concensus. If you want to watch those you'll have to dig around for them on an DVD. The western palette for anime is kind of spoiled by a lot of the things they put on TV these past few years.
Hmm, well Claymore was one I just watched and really enjoyed... You should enjoy Death Note.. Also try Full Metal Alchemist (not brotherhood, the first series), I HAVE to say you watch Dragon Ball/Dragon Ball Z... Hmmm... Godannar was pretty good, but had some slow points...

I personally recommend Shakugan no Shana. It might not be the strongest out of the ones listed, but it's not exactly mainstream, either...it's quite the gem and has developed quite the fanbase over the years.
One Piece is a great anime. The first season is really repetitive, but after that, it gets action packed, non-repetitive, and you can see clear maturity in the characters.
Latley I've been watching Elemental Gelade, which is an awesome series so far, (I've only seen 9 episodes) but I don't know if the Manga or the Anime came first so I don't know if there's any filler.
