Maybe a new kind of horse Pokémon... It's not completely French obviously, but seems like a good time to introduce one. We only have Ponyta and, at a stretch, Blitzle!

First of all, ESGARTOTTO, the 'Tastes Like Chicken Pokemon'

And an evolution, or a side evo for Crawdaunt and its pre-evo.
 
I don't think snails are particularly attributed to france; rather, just the eating of them.
 
A French poodle or a French Bulldog? Good time to bring in some wolves or a princely Pokemon.

I had a beauty and the beast idea too, the beauty was a female gym leader/E4 member with Dragon type 'beasts'.
 
The japanese and NY inspired regions never had pokemon based on those real world places exclusive to them.

Heck you got the Fujin and Raijin, japanese weather demons roaming Unova along with the musketeers (doesn't get much more french than that eh?). /LOL

For the french bulldog, they could make the ears REALLY big. Playing off of the fact that they already have big ears.
 
Probably Froviné ( Fromage + Vin which is French for cheese and wine with that special "ay" sounding "e" at the end )
Maybe he'd be a mouse shaped like an Anjou wine glass (mouse has been chosen due to France's famous sewer tours, especially in Paris)
Maybe the glass shape comes from something that looks similar to a wedge of Brocciu cheese, a wedge of Chaource cheese and a strip of Comté cheese.

Once, I actually did make up a Mr. Mime evolution that had trait of a stereotypical Frenchman. Wouldn't his ability be Run Away then?
 
What about something having to do with the catacombs in Paris. Maybe some sort of skeleton.

Its starts off as a blob of ash...




Then evolves into a blob of ash with cigarette arms!




Okay I may have had just a little bit too much fun with this xD
