Not sure if there's already a deck discussion on this deck, I couldn't seem to find it. Yveltal/Mew has seemed to be going up in popularity at the moment and I am trying to give it a go, however i have been unable to be able to get it working effectively. Any thoughts?

What issues are you encountering? Other than a few tweaks I would personally make to suit my play-style, your list is solid, IMO.

Only 1 Stadium? I'd say you need more than that, for a counter if nothing else. I've got 1 Parallel City and 2 Reverse Valley in mine. Reverse Valley I really like in this deck because, with Fright Night not getting the benefit of a belt, it gets the 2HKOs on 130HP Pokémon. Not great in the Scizor match-up, but Scizor isn't a big thing in my area (because Volcanion is) so it's not a problem for me.

I'd also maybe cut the Float Stone. Nothing costs more than 2 to Retreat, which is fine if you're desperate. I'd replace it with a second Escape Rope - .

I certainly wouldn't cut any Energy, you'll find Elixirs a problem if you do imo.

I can see the temptation to drop Umbreon, I've considered it myself as I'm yet to successfully Endgame for 4 Prizes, HOWEVER I have had it done to me when I played M Mewtwo and it's pretty spectacular when it happens, so I'd say it's worth leaving him there for now.

I've been meaning to add Delinquent in myself, I may replace Ranger with it. And also Super Rod, I've not ran into too much trouble without it but again it's something I may add in the future. I could probably afford to cut 1 Yveltal XY for it like, he's not all that useful.
 
I would run more then one Stadium Even if you're goal is to use it to discard your Shaymins. Chella has a good point about Float Stone if anything Mew should be your pivot switch with the free retreat. Even if Garbador/Hex/Silent Lab are out Mew can still switch out for free. Two Ropes/Switches should help get you out if something is dragged in instead. I think Faded Town would be a good second stadium as it does nothing to you and only harms the opposition. I would take out a Lysandre for a Stadium:

So i have kind of a dumb question, but what does the Mew do for the deck? I understand it has free retreat andits ability allows it to use any attack from another pokemon but why run it? Its so fragile, i dont think itll be able to stay out for long.

Mew can be used as a "substitute" attacker instead of committing a more important resource (e.g., Yveltal EX). Yes, Mew is "fragile," but it's better in many cases to sacrifice the "1" prize vs. "2." Mew can also be a solid counter to M Mewtwo EX decks too.

I have not had much luck w/ activating Endgame...

On the other hand, I had more luck w/o Ninja Boy and/or float stones when it comes to yveltal decks...

Besides, w/ two Shaymin and zero hoopa additions to a yveltal deck like yours, combined w/ retreat costs of no more than a Double Colorless, I made the following deck to help you out in terms of what cards take the above into account to rectify the issue of what cards are worthy enough to toss out umbreon from the list and leave two more spots for stadiums at the expense of ninja boys with a focus on hindering opposing tools, making sure that the opponent can't beat you to a full set-up, and maintaining enough energy to help out your yveltals, or, if necessary, Darkrai and its dark pulse attack(10 dark energies + Belt = 1HKO vs. M Gardevoir-EX w/ Dark Pulse), in terms of KO delivery:
