The most iconic for me: The Rival Battle between you and Gary in RBY, that, or Lavender Town/Pokemon Tower

You mean the Champion Battle? Because other than that, Gary didn't have a theme, he used the normal trainer battle theme.

No. Aside from the Champion battle, he's never had his own battle theme, he always used the usual trainer battle theme.
 
The Deoxys battle music is quite iconic, but it's probably something like the Pokemon centre theme or the main theme.

from the original Games, Lavender was really good, but HG/SS wrecked that. In the anime Heroes of Hoenn was the best, i even have it on m i-Pod
 
Iconic? Of the ones that have come to mind, I think the Evolution theme suits.

The music that I like, though:
(Anime): Team Rocket's Motto (Jessie & James)
Sapphire: Team Aqua Theme (not battle)
Emerald: Battle Frontier--VS the Brains
D/P/Pl: Final Battle (w/Cynthia)
HGSS: Final Battle (w/Lance or Red)
B/W: Wild Pokemon (from phenomena, such as shaking grass)
