Half of all Flying Types at the moment aren't even Avian! I want most, if not all Flying Types this Gen to be Birds.
3-Stage Sea Gull (Starts as Lesser Black Headed and ends at Herring Gull)
2-Stage Black Bird
2-Stage Blue/Great T!t
1-Stage Peacock (Legendary)
1-Stage Heron (Could be Blue and Shiny is Red)
2-Stage Ibis/Spoonbill
1-Stage Owl (Legendary)
1-Stage Robin (Legendary)

I said PRE evolution =) meaning a baby then it would evolve to lapras

One of my gen7 fakemon is a Water/Fire hydrothermal vent but it's really the only thing I could think of for it. It's more difficult than Ice/Fire.
And DasMisfits, Lapras already has 535 BST. There's no way it'd be able to evolve unless they only added a few stats to each or if they just changed around the base stats to either make it bulkier or more offensively oriented. Or if they give it 555 like Arcanine has.

An Earthworm is a great idea - it would be a very unique 'common bug' pokemon for the beginning of the game. Maybe a Bug/Ground type?
I'd prefer a Normal-type horse over a donkey, or maybe both. Turkey is a great idea too.
I'd love to see a Chaffinch pokemon
and maybe have it evolve into a kestrel

We got 2 of those who you didn't say "new". The first one is Furret being a ferret. Chespin is a porcupine which is sort-of a hedgehog (I don't know the difference but there must be some).

Squid - Tentacool/cruel
Panther - Liepard
Dog - Growlithe, Arcanine, Smeargle, Houndoor, Houndoom, Poochyena, Mightyena, Electrike, Manectric
Lion - Entei

Horse - Blitzle is the closest thing you'll get bar an actual horse like Ponyta. Horsea if you stretch it.

A Horse would be an excellent addition - they haven't really had one since Ponyta (not counting the zebra line for Blitzle).
Maybe a Normal-type Horse that evolves into a Normal/Steel type Horse with iron horseshoes?

Liepard is a Leopard (So is Suicune). We don't have a Panther or Jaguar.

That said, I'd love a giant squid/sperm whale pairing similar to Heatmor/Durant. (sidequest where you have to stop a shiny pair from fighting and get a shiny squid if playing X or a shiny whale if playing Y?)

Since it seems like X and Y take place in Paris France there are a couple of pokemon possibilities that come to mind. When I think of france i think of:
Ballet, Cheese, Baguette, Grapes (Wine), Art (Especially Paintings), Berets, Snails, Frog's Legs, Croissants, Mimes (Maybe a female version of Mr. Mime)...
I don't know if you really can turn these kind of things into Pokemon and I'm not really an expert on France.
I guess they could make some kind of ballet pokemon with a Tutu. Some kind of grape pokemon i guess that reminds me of Cherubi.
