Let's say I have a Pokemon Egg. What happens if I save the game, hatch the egg, soft reset the game without saving, then re-hatch the egg?

The stats for the egg are fully set when you pick the egg up. If you save the game after picking the egg up, nothing's going to change.
Before you pick the egg up, I believe only its species has been determined.

-Catch a Pokemon in a Luxury Ball or Friend Ball
-Walk around; for every 256 steps, your Pokemon gets a Happiness point
-Level up your Pokemon
-Get the character in the game to massage or groom your Pokemon
There is a character in the game who will check your Pokemon's happiness. She is located in Nacrene City to the right of the Pokemon Center. You can determine the happiness that way.

The massage person is in Castelia City, directly across the street from the Game Freak building (on the rightmost street).
By the way, although the Nacrene City person will check happiness, she doesn't do it very well - she only gives you a general idea of if it loves or hates you. If you want a more specific idea, go to the woman in the Fan Club in Icirrus City (building directly south of the gym, on the west of town).

In Pokemon White, is there anyone with a Vullaby/Mandibuzz you can battle? I just need to see both of those, Landorus, and Tornadus, but I'd like to get those two out of the way first, and I'm not sure if they're just see-able in Black version

No, none of those Pokemon are seeable without trading with Black.
